Saffron Rice (Tahdig-Style)

- Rinse 2 cups basmati rice until the water runs clear, then parboil in salted water for 6–7 minutes and drain.
- Bloom a generous pinch of ground saffron in 3 tablespoons warm water.
- Coat the bottom of the pot with oil or butter, layer the rice back in, and steam on low, covered with a towel-wrapped lid, for 30–35 minutes.
- Fold the bloomed saffron into the top layer of rice before serving — and don't forget the crispy tahdig at the bottom.
